Ingredients:
1 medium to large head of cauliflower
1 cup water
1/2 cup cashews
1/4 cup nutritional yeast flakes
juice of 1 large lemon
2 T tahini
1 T onion powder
2 T Dijon mustard (like Grey Poupon)
1/4 tsp salt
1/2 tsp garlic powder
1/2 tsp mustard powder
1/4 tsp dried dill
1/4 - 1/2 GF breadcrumbs, or other crusty topping - I used crushed blue corn chips
1/4 cup chopped parsley
Directions:
- Preheat oven to 350
- Oil a 9x13 baking dish
- Wash and chop cauliflower to bite size pieces
- Place cauliflower in baking dish - try to keep it to one layer
- Mix next 11 ingredients in a high powered blender until creamy
- Pour sauce over cauliflower
- Sprinkle breadcrumbs over the top
- Bake at 350 for 25 minutes
- Top with parsley
This is great as a side dish, or can be served as the main course. I served this as a main course over a bed of millet with a large salad.
